Add olive oil into large saucepan or wok and toss in vegetables to sauté over medium heat and cover while they cook. Mix the vegetables every-so-often and let cook for about 3-5 minutes until browned.
In a separate small saucepan, add the soy sauce and Just Spread Preserves. Heat on medium to high and cover to cook; make sure to stir the sauce every-so-often. Once the mixture comes to a boil, turn heat down to low.
Add the rice to the large pan with vegetables and mix together. Pour the sauce over the rice and mix it all together to continue to fry up.
Sprinkle in crushed red pepper and sesame seeds into the stir fry and mix together.
Mixing every minute or so let the rice cook until the sauce has caramelized onto rice
Turn off heat, serve, and enjoy!.
This meal would also be great with chicken or beef. Just double the sauce to make sure the meat gets enough flavor.
